My lovely Sunday lunch routine started up again today, and Charles Voudouris, the executive sous-chef at Viceroy suggested I try something new. To that end, I landed up at Bamboo Bar and Grill, a casual open-air restaurant on Meads Bay at Viceroy. What a good suggestion! Again, upon his suggestion, I tried the “Island Joyah Bread”, a perfect lunch salad. I wrote down the description from the menu, knowing I’d forget something if I tried to keep it in my brain. “Farm greens, cucumber, roasted pepper, kalamata olives on a grilled flat bread, with a citrus dressing”. One can order this with jerk chicken (which I did today), skirt steak, snapper, crab or prawns. This is one of the tastiest salads I’ve had on Anguilla – the flavours all meld together in perfect harmony (something about the smokey goodness of the roasted peppers, and the slight tang of the citrus dressing), and I think I’ll definitely be back to try some of the other variations.
